近海有長螯小龍蝦,身形苗條,色比胭脂,貌不及大龍蝦華麗,肉質甜嫩有過之。清蒸三五分鐘可食,真懶人佳饈。
適逢冬,當產季,帶回一打活蝦,個個飽滿懷春,炯炯有神。快火蒸后以現打Sauce béarnaise 沾食。醬中用少許咖哩粉替龍蒿,辛香滑潤,與鮮蝦相襯。
至此心滿意足?非也,蝦肉美則美矣,尚未盡其全功。將滿桌殘骸重新分門別類,蝦頭、甲身回鍋同青蔥爆香,煉出殼中精髓,復加日式高湯稍煮。濾出佐播州細烏冬食之,以滿瓢蝦籽點綴。一籮廚餘整出清湯掛麵,素淡中有真鮮。
